Fiesta Pasta Salad

1 c. light mayonnaise

1/2 c. sour cream

1/4 c. fresh parsley

2 T. fresh lime juice

1-2 pickled jalapeno peppers, seeded and minced

1 tsp. sea salt

8 ozs. rotini macaroni, cooked, rinsed and drained

2 large tomatoes, chopped

1 sweet yellow or red pepper, chopped

1 medium zucchini, sliced

3 green onions, sliced

In bowl, combine mayonnaise, sour cream, parsley, lime juice, jalapenos and salt. Add remaining ingredients and mix. Cover and refrigerate.

Makes 8 cups.
